Instant Pot Cabbage Roll Soup (with stove-top directions included)

Instant pot cabbage roll soup is not only a cheap and easy recipe that makes a great weeknight dinner; it’s also so hearty, healthy, and absolutely delicious. 

Maybe you’re like me and you love cabbage rolls, but hate the work of stuffing and rolling them. This easy instant pot soup recipe is for you. I’ve also included stovetop directions in case you don’t have an instant pot yet. (Just jump in and buy one already! You won’t regret it!)

If you haven’t pulled out your instant pot this winter yet you need to dust that sucker off. The instant pot was made for quick and easy soups. Cook time gets reduced to just a few minutes. The ingredients in this recipe are pretty old fashioned. Nothing fancy or expensive needed to make it shine. Ground beef, cabbage, rice, onion, garlic, tomato paste, tomatoes, broth and seasonings. I love keeping it simple and serving this soup with an easy bread like cornbread or beer bread.

Step by step: Making Instant Pot Cabbage Roll Soup

Ground beef is browned with onion and garlic in the instant pot.

Step 1: Turn the instant pot to saute and brown the ground beef with the onion and garlic. Press cancel and drain the grease leaving a little in the instant pot.

Next, the seasonings, tomato paste, tomatoes and broth are added to the instant pot.

Step 2: Add the seasonings, tomato paste, canned diced tomatoes and broth to the instant pot. Stir to combine.

And lastly, the cabbage and rice are added to the instant pot.

Step 3: Add the rice and chopped cabbage to the instant pot last. Give it a stir to make sure it’s all combined. Then seal the instant pot and cook on manual for 5 minutes.

Step 4: When the timer goes off, let it set for 10 minutes before releasing the steam.

Making it on the stove top instead:

You can also easily make this on the stove top instead. To make it on the stove top, just brown your ground beef with onions and garlic. Drain any excess grease. Add the remaining ingredients and bring it to a boil. Reduce to a simmer and allow it to simmer for 25 minutes or until your rice is tender and so is the cabbage.

Recipe notes:

  •  One thing you should know about this recipe is the longer it sits the thicker it gets. So leftovers will be way less soupy as the rice absorbs the broth.
  • This soup freezes well. Try portioning it out into freezer bags for easy storing and thawing!
  • Ground pork, ground turkey, and ground venison all work well in this recipe.

Instant Pot Cabbage Roll Soup ( with stove-top directions included)

If you love cabbage rolls, but hate the work of stuffing and rolling them then this soup is for you. 

Ingredients

  • 1 pound ground beef*
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 5 cups coarsely chopped cabbage
  • 1 (6 ounce) can tomato paste
  • 1 (28 ounce can) diced or crushed tomatoes
  • 32 ounces beef broth
  • ⅔ cup long grain white rice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 ½ teaspoon Italian seasoning
  • 1 tablespoon sugar
  • ⅛ teaspoon crushed red pepper (optional)

Instructions

  1. Turn your 6 quart or larger electric pressure cooker to the "Saute" setting and brown the ground beef with the onion and garlic making sure to break the meat up into small pieces as it cooks. Once the ground beef is completely browned, press the cancel button on the cooker. If there is an excess amount of grease from the beef, drain it off before continuing.
  2. Add the seasonings, tomato paste, diced tomatoes and beef broth to the cooker.
  3. Next add the rice and cabbage, stirring everything to make sure it's well combined.
  4. Put the lid on and make sure the vent is set to the "seal" position. Cook on Manual pressure for 5 minutes.
  5. After the timer has gone off, let the steam naturally release for 10 minutes before releasing any remaining steam with a quick release.


Stove top instructions:

You can also easily make this on the stove top instead. To make it on the stove top, just brown your ground beef with onions and garlic. Drain any excess grease. Add the remaining ingredients and bring it to a boil. Reduce to a simmer and allow it to simmer for 25 minutes or until your rice is tender and so is the cabbage.

Notes

Made this today! I was going to make golabki abbage rolls and really didn't feel like taking the time to make them. I already had all the ingredients so I figured why not?

Was wondering if you could sub cauliflower rice for the rice in order to make it carb free? This sounds great!

You know, I think that's a great idea, but I'm not sure that the cook time would be the same as I've never tried it. I'm afraid that it might cook more quickly than the cabbage and break down. Please let me know if you try it though!

I feel like there should be way more comments praising this recipe! It’s such an easy, budget friendly, well balanced meal idea and my whole family loved it! My husband, 5 yr old and toddler are very picky but all of them went back for seconds and we still stretched this meal for two dinners. Thank you for this recipe, I’m definitely keeping this one in rotation! And completely agree with the garlic, it’s the only thing I tweaked as well :)
