I’m assuming that you’ve probably brushed off the barbecue grill and pulled it out of storage, because from the smells I’ve been smelling on my evening walks…all my neighbors have been grilling. We’ve been grilling too, which for me means it’s time to bust out my easy summer side dishes and salads.

Today I have a really simple and fresh apple coleslaw recipe for you. This apple slaw is crisp and crunchy with fresh apples, celery and coleslaw mix. It’s topped with a homemade poppy seed dressing that lends a tangy sweet and sour flavor to the slaw and is an absolute breeze to whip up.

This slaw makes an excellent accompaniment to pulled pork sandwiches, grilled chicken, or basically any meat you can smoke or grill.

You can keep this cabbage slaw simple with the base recipe of apples, celery, coleslaw cabbage mix and poppyseed dressing, but there are so many optional add-ins that go great in this coleslaw.

Optional add-ins:

  • 1/2 cup toasted walnuts or pecans
  • 1/2 cup raisins or craisins
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sunflower seed kernels
  • 1 cup sliced grapes

What kind of apples should I use for apple cabbage coleslaw?

Whatever your favorite plain eating apple is. I use Gala apples, but Granny Smiths, Jonathan, Fuji, and Pink Lady apples are also great choices.

Can I make apple coleslaw ahead of time?

Yes. The apple cider vinegar not only adds delicious tang, but it works to keep the apples from browning! So it’s easy to make ahead and stays good for several day in the fridge.

Ingredients

For the coleslaw

  • 4 cups coleslaw mix or shredded cabbage
  • 3 apples, chopped
  • 3 ribs celery, chopped

For the poppy seed dressing

  • 3 Tablespoons sugar
  • 3 Tablespoons apple cider vinegar
  • 2 Tablespoons vegetable oil
  • 1 Tablespoon mayonnaise
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard

Instructions

  1. Toss together the apples, celery and coleslaw mix in a large serving bowl.
  2. Whisk together the dressing ingredients. Pour the dressing over the slaw and combine.
  3. *Can be made a day or two ahead of time.*

Notes
